The “Spring Cleaning” Chop Salad feat. Cleansing Cilantro & Lovely Lycopene

I loooooove the sunshine! And I am so grateful that we are seeing more and more of it lately. While many of us are using the new season as an opportunity to open the windows and let some fresh air in at home, my mind has been wandering to “spring cleaning” some of my meals.

Today for lunch as I was rooting around to see what I could throw together, I was happy to end up with this colorful chop salad packed with nutrients to support a spring cleaning of body and mind to promote happiness and health. The combination of lycopene-rich tomatoes (cherry tomatoes have even more lycopene), which has been linked to prevention of depression symptoms and powerful detoxifying cilantro, is a great one-two punch to begin with. On top of that, recent studies have shown cilantro to also be effective in treating anxiety, depression and panic attacks.

Ingredients

  • 2 cups cherry tomatoes
  • 5 green onions
  • 3 cloves garlic
  • 1/4 cup cilantro
  • juice of two limes
  • 1 tsp Himalayan sea salt
  • 1 tsp black pepper

Directions

Chop all ingredients, stir together to coat. Eat Happy 🙂
