Quick and Easy Berry Cobbler

With Valentine’s Day coming up, we are surrounded by so many unhealthy treats, I always like to keep a few healthy options in my back pocket. This quick and easy berry cobbler is gluten-free, dairy-free and stress free! You can substitute with just about any fresh or frozen fruit you may have on hand. This is also delicious with peaches.
Quick and Easy Peach Cobbler
Topping Ingredients:
- I cup Almond Meal
- 2 tbsp Coconut palm nectar crystals
- 2.5 tbsp Solid coconut oil
Filling:
- 4 cups mixed berries (if using frozen, thaw and drain thoroughly)
- 1 tbsp coconut palm nectar crystals – optional for added sweetness
Directions
- Preheat oven to 375°F
- Spray 8″ x 8″ baking dish with organic cooking spray
- If desired, mix 1 tbsp coconut palm nectar crystals (or 1/2 tsp Stevia) with berries
- Add fruit to pan
- Mix topping ingredients with fork
- Spread topping crumbles over fruit mixture
- Bake 25 minutes
